Executive Chef Stéphane Beaucamp’s Green Goddess Dressing

It was a chance meeting meeting with Terry Conlan, the longtime chef at Lake Austin Spa Resort, who had decided to retire, that helped make up Chef Beaucamp’s mind in leaving Los Angeles behind, where he had worked for the likes of Elton John, Nicole Kidman, and Charlize Theron.

“Our family lives a simple, eco-friendly, organic lifestyle,” he says, “and I realized that what Terry had been doing was exactly what I wanted to do. In the past, the way I lived and the way I cooked were different. This was a chance to bring them together.”

The Makings:

½ cup buttermilk

½ cup “light” mayonnaise

½ cup fat-free sour cream

½ cup goat cheese

2 cloves garlic, minced

1 teaspoon anchovy paste

1/4 cup minced chives

1/4 cup minced parsley

1/4 cup minced tarragon

1 tablespoon lemon juice

1 tablespoon tarragon vinegar

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

Let’s Make it!

Combine all of the ingredients in the bowl of a food processor, pulse a few times until the mixture pulls together and then puree until smooth. Serve immediately or refrigerate until need.

Makes 2 cups
